Learn the ins and outs of cooking and selecting local beef. We will explore the differences between mass produced, natural, and grass-fed cows. Many cooking techniques will be covered, including searing, roasting, braising, and proper seasoning while we learn recipes for a Grass-fed beef burger with Beecher's cheddar, pickled pepper aioli, and bibb lettuce, a New York Strip Loin with shallot and tarragon pesto, Pho spiced short ribs with carrot puree and a Baby lettuce salad with fennel and creamy citrus dressing in this class taught by Chef Darin Gagner.
